SALAD IS THE MAIN DISH
One of my favorite doctors is Dr. Joel Fuhrman. I call him my health guru. He recommends that your salad the main dish daily. He has numerous books, CDs, and DVDs out: Eat to Live, The End of Diabetes, the End of Heart Disease, Eat for Health and more. He has a video on how to prepare vegetables that are chock full of micronutrients. He shows you how to cut and prepare each veggie to release even more nutrients.
His version of the food pyramid is almost a reversal of conventional “wisdom.” The base is made up of vegetables which is the greatest quantity of food to eat and the tip of the pyramid and smallest amount recommended to eat includes meat and cheeses. What is wonderful about his educational style is that he always includes easy to make recipes in all of his recommendations. Nothing is left to chance. Many eat a salad thinking they are eating well and maintaining low calories, but they drench the salad in oodles of dressing creating a 300 to 500 calorie dish. Two tablespoons of oil is about 120 calories but a dressing made with one of Fuhrman’s recipes is maybe 20 to 50 calories.
